    During our trip to Vietnam, as we enjoyed breakfast one morning, we witnessed an elderly gentleman sweeping up the debris strewn along the path – large plastic bags filled with food and plastic waste – and disposing it into the Hoi An River. It was a scene that, if captured on video, would have sparked viral outrage. Coupled with our flights and the ubiquitous airplane food served in single-use plastic everything, it's challenging not to feel disheartened by the scale of our waste problem.

    Have your coffee and drink it too ~ Part 2

    Hopefully by now you have been able to enjoy a coffee or two while the kids have played big. Well there is more! Grab your Luxey cup for more take-away and play

    Columbian Coffee Co.

    Columbian Coffee Co. is located just a short walk to one of the most popular Sunshine Coast beaches. This coffee shop roasts it's own responsibly sourced beans and as you know, we love everything sustainable, responsible and ethical. Your Luxey cup will hold the coffee as you head to the Mooloolaba patrolled beach. As a bonus there is also a playground beachside, giving you double play potential. 

    Flinders Lane

    This cafe has two awesome playgrounds nearby, so you may have to visit more than once. Grab a smoothie in our Middle Child cup or a cold press juice using a cold drinks pack and take the short walk over to Sunshine Cove Park. If you are up for a longer walk, Tinnanbar Terrace Park is perfect for toddlers and older children. 

    Skal Coffee

    Peregian Beach is a cute little beach town close to Noosa. Skal has all your beverages covered; coffee, smoothies, chai, teas and juices and Luxey cup can hold them all. Once you have your drink, it's only a stones throw to the Peregian Playground. It's the perfect size and has a large adjoining grassy area. Who knows, you may even get to sit down while you finish your beverage. 

     

    Lawn Bar

    Friday through to Sunday the Coolum Football Club is transformed into the Lawn Bar. The kids can roam free in the fully enclosed space while you relax with your choice of speciality coffee, beer, wine or cocktails; depending on what time of the day you go of course! Take a picnic rug, order some food and listen to the live music- did I mention the kids can safely roam free?

     

    Archer Speciality Coffee 

    This one is a little less conventional but still qualifies for takeaway and play. Archer Speciality Coffee is located in the Sunshine Plaza (outside the lower Myer entrance). The coffee is good and the big kids can move onto the Next Level high ropes course. Meanwhile if you have littles there is a small playground along the boardwalk. Everyone is happy!

    Even if you don't call the Sunshine Coast home, you can still use your Luxey Cup for all your big and little adventures. Go out and make memories to last a lifetime.

    These delicious choc chip cookies are not only vegan but also gluten free!
    Substituting dairy chocolate for vegan dark chocolate will make these choc chip cookies a little healthier as vegan dark chocolate is stacked with health benefits!

    INGREDIENTS 

    1 1/4 cup almond meal
    1/4 cup vegan dark chocolate
    1/3 cup gluten free flour blend
    1/2 tsp baking powder
    1/4 tsp sea salt
    1/3 cup organic coconut sugar
    1/4 aquafaba
    3 tbsp coconut oil
    1/2 tsp vanilla extract

     

    INSTRUCTIONS

    1. In a large mixing bowl, stir together almond flour, dark chocolate chips, gluten-free flour, baking powder, salt, and organic coconut sugar. Set aside.

    2. In a separate mixing bowl, beat aquafaba using a handheld mixer until light and fluffy and loose peaks have formed. 

    3. To the aquafaba, add the melted coconut oil and vanilla and beat or whisk to combine. Then add to the dry ingredients and mix until just combined. You should have a firm, semi-tacky dough.  

    4. Loosely cover and let chill in the refrigerator for 30 minutes. In the meantime, preheat oven to 375 degrees F (190 C) and line a baking sheet with parchment paper.

    5. Scoop out 1 1/2-Tablespoon amounts of dough and transfer to your lined baking sheet. Use the palm of your hand to smash the cookies down slightly into small mounds. They won’t spread much, so no need to leave a ton of room between cookies. There should be about 11 cookies (amount as original recipe is written // expect a different yield if altering batch size).

    6. Bake for 12-15 minutes or until the edges are golden brown. Be careful not to burn (especially on the bottoms).

    7. Remove from oven and let cool on the pan for 5 minutes. Then carefully loosen with a spatula and enjoy or continue to let cool.

    8. Store cooled leftovers in a sealed container at room temperature up to 4 days or 1 month in the freezer.
