LUXEY RECIPES | SL's Zucchini Fritters
Everyone has been asking us to share SL's delicious Zucchini Fritters (including her warehouse staff). We see her eat these scrumptious fritters on the weekly, and they smell as good as they look! So we have been pestering her for the recipe just as much as our Luxey lovers.

You will need:
- 1/2 Onion finely chopped
- 2 Garlic clovers finely chopped
- 1 Cup Besan flour (chickpea flour)
- 1/2 Cup hemp seeds
- 1/2 Cup filtered water
- 1 Cup cooked and cooled quinoa
- 2 Cups grated zucchini
- 1 Cup chopped fresh herbs of your choice
- Salt
- Good oil for shallow frying
INSTRUCTIONS
1. Gently cook off your onion and garlic in some olive oil until translucent in a small fry pan
2. Place the Besan flour into a large bowl with hemp seeds and add enough water to make a thick batter
3. Add the grated zucchini, quinoa, herbs and salt to the batter and mix everything together
4. Heat the oil in a large non-stick pan over med-high heat and cook the large dollops of the mixture for a few minutes each side until they are nice and golden
5. Serve with a yummy tahini sauce, fresh avocado and vegan mayonnaise
