LUXEY RECIPES | Vegan Chocolate Chia Mousse

After all the holiday eating and indulging we are ready to go back to our healthy habits but not giving up on delicious snacks and sweets treats - and this recipe has everything that we need (hello, chocolate) and it's still super healthy. That's why this is the perfect snack to keep in your fridge and satisfy your cravings.
Are you wondering why we call this a chia mousse and not a chia pudding? That's because we blend the chia seeds with the plant-based milk and blending breaks down the seeds. Going through the blending process creates a more uniform and creamy texture, which makes it very similar to a chocolate mousse texture.
This recipe makes the perfect quantity for three MiniLUX Sealed containers - or a MiniLUX Sealed Pack - with little room for toppings.
4 tbsp chia seeds
1 cup plant-based milk
4 tbsp coconut cream
2 tbsp unsweetened cocoa powder
1 tbsp pure maple syrup
1 tsp vanilla extract
Mix together the chia seeds and plant-based milk in a bowl and stir well. Allow to rest for at least 5 minutes, and then whisk again.
Scoop out four tablespoons of the solid white cream from the can of coconut cream.
Pour the chia seeds and milk mixture into a high-powered blender and add the coconut cream, cocoa powder, maple syrup and vanilla extract. Blend until all of the ingredients are thoroughly combined and the mixture is thick and creamy.
Transfer the chia mousse to your MiniLUX (or other sealed containers) and refrigerate for at least 1 hour.
